Easy Homemade Poptarts

Good morning everyone! Funny enough, these were made in the middle of the night. And they barely made it to breakfast time due to how much I love to snack on these. Summer midterms are coming up and I know that one of my biggest stress relievers is baking. With breakfast being one of the most important meals of the day, prepping a breakfast treat is one of the best gifts you can give a half-awake, stressed college student.

I've seen there be a little debate on what dough to use when making poptarts. The top three contenders being pie crust, pastry dough, and homemade dough. I've tried all 3, and continue to stick with pie crust. Pastry dough creates more of a toaster strudel texture, homemade dough can be great for when you're looking for a more cookie-like texture, and pie crust gives a rich, yet solid crust with a nice crunch to it, which I personally feels the most like a poptart crust.

When cutting the strips, use a pizza cutter to make it easier.

From left to right: Jam added, jam with the egg mixture brushed around, and then crimped close. Fun tip! If you really enjoy a crispy crust, add the egg mixture on the outside of the crimping as well.

When making the icing glaze, have patience. If it really doesn't combine, take a rubber spatula, add a another teaspoon of the heavy whipping cream, and then consistently mix around and then flatten it out with the spatula, and then scrape it into itself, and repeat until it gets into a consistent frosting texture.

I really hope you enjoy this recipe, and if you try it, to share it with me on my Facebook page, tag it on Instagram or Twitter with #strudelbee . I feel like this recipe is perfect for an upcoming stressful few days, a pick-me-up, picnics, or just to make with friends!
